Hershey's Best Brownies

Since we're talking about Hershey's brownies I figured I should make some, too.

Hershey's Best Brownies

  • 1 cup (2 sticks) butter or margarine
  •
  • 2 cups sugar
  •
  • 2 teaspoons vanilla extract
  •
  • 4 eggs
  • 3/4 cup HERSHEY'S Cocoa or HERSHEY'S SPECIAL DARK Cocoa
  •
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  •
  • 1/4 teaspoon salt
  •
  • 1 cup chopped nuts
  • CREAMY BROWNIE FROSTING

Directions

  • 1. Heat oven to 350°F. Grease 13x9x2-inch baking pan.
  • 2. Place butter in large microwave-safe bowl. Microwave at MEDIUM (50%) 2 to 2-1/2 minutes or until melted. Stir in sugar and vanilla. Add eggs, one at a time, beating well with spoon after each addition. Add cocoa; beat until well blended. Add flour, baking powder and salt; beat well. Stir in nuts, if desired. Pour batter into prepared pan.
  • 3. Bake 30 to 35 minutes or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack. Prepare and frost brownie with CREAMY BROWNIE FROSTING, if desired. Cut into bars. Makes about 24 brownies.
These were okay. I think I would have liked the ones Sarah just posted more, because I really like dense, fudgy brownies and these weren't that type of brownie. They were more... I don't know. Kind of cakey, but only somewhat cakey? Not worth all the butter and sugar, in my opinion.

Hershey's 5-Minute Recipe #3 Fudgey Brownie

Fudgey Brownie  (Mixes in 5 minutes!)

3/4 c Hershey's Cocoa
1/2 t baking soda
2/3 vegetable oil
1/2 c boiling water (measure accordingly)
2 c sugar
2 eggs
1 1/3 c unsifted all-purpose flour
1 t vanilla
1/4 t salt

(1) Stir cocoa and baking soda in mixing bowl. (2) Blend in 1/3 cup vegetable oil. (3) Add boiling water; stir until mixture thickens. (4) Stir in sugar, eggs and remaining 1/3 cup vegetable oil; stir until smooth. (5) Add flour, vanilla and salt, blend completely. (6) Pour into slightly greased 13 X 9 baking pan or two 8" square pans. Bake at 350 degrees for 35 59 40 minutes for 13 X 9 pan. 30-32 minutes for 8" square pans. Cool; frost if desired.

They really were very good, quite similar to boxed brownies with the crispy top and fudgey inside. And they were fast to mix up. I just used a bowl and spoon.

Mixing the boiling water into the cocoa soda mixture was interesting. I didn't realize it would activate the soda and thicken it up so much.

Please note: the recipe is actually for Fudgey Brownie, not brownies.

Chicken Enchiladas

This is the classic recipe that Mom made, though I don't really remember eating them much when we were younger.

3 lbs. chicken breasts
2 cans cream of chicken soup
1 c. sour cream
1 1/2 c. chopped onions
1 can (4 oz) green chilis
grated cheese
flour tortillas

Boil chicken till tender and done. Bone the chicken and shred it into pieces. heat soup, sour cream, onions and chilis together for 5 minutes. Put some chicken, cheese and a couple of tablespoons of soup mixture into each tortilla and roll each one separately. Put in a lightly greased baking pan. Pour remaining sauce over top and sprinkle with cheese. Bake for 30 minutes at 350 degrees.

These are awesome! Grandma made them for us while we were in Aberdeen. And I made them last Sunday. I had the one leftover one Monday for lunch.

The best thing about trying this recipe was that I tried out our time cook feature on the oven. These were perfect when we got home!

Snack Crackers

I made these a while ago when I took dinner over to a friend who had just had a baby. I thought they would be cute to turn into bunnies (thanks pinterest) and would be a good weeknight snack that wasn't a full-blown dessert.
Thanks myadventuresinthecountry.com for the pic. I thought
about doing this for a book club I hosted around
Valentine's Day.

Chocolate Bark
Peanut Butter
Ritz Crackers

1. Spread peanut butter on half of crackers.
2. Make sandwiches.
3. Melt chocolate bark over low heat.
4. Dip sandwich into melted chocolate.
5. Drizzle extra chocolate on top of sandwich.
6. Cool on wax paper.

I remember Mom making these once. They were a good treat. I know I have also done these with Town House Crackers as Easter eggs, so there are lots of possibilities out there using these.

Soft Oatmeal Cookies

This was another recipe I made to fulfill my cookie cravings and I only picked it because we had the ingredients and they are mostly healthy.

3/4 c. margarine
1 c. packed brown sugar
1/2 c. sugar
1 egg
1 c. cottage cheese
1 1/2 tsp. vanilla
1 c. flour
1/3 c. wheat germ
1 tsp. salt
1/2 teaspoon soda
3 cups quick-cooking oatmeal

Beat first 6 ingredients until creamy. Add combined dry ingredients. Stir in oats. Drop onto ungreased cookie sheet and bake at 350 degrees for 12 to 15 minutes. Makes 4 dozen.

Well, they were interesting. I can definitely think of better uses of cottage cheese than these cookies ie. lasagna and just eating plain. But, they all got eaten. Little Chubb would probably have eaten them all if we would have let him. I unfortunately didn't halve this recipe so we had a whole bunch that we had to eat.

Zucchini Day 2015

We had zucchini day yesterday, sponsored by The Cupboard Project. We don't have enough to do zucchini week, but one day of all zucchini meals was pretty good.

I began with these muffins.

Zucchini Muffins

Mix together:
1 1/3 c flour
1 t salt
2 t baking powder
1/4 c sugar

Combine 1/4 c oil
2/3 c water
1 egg, beaten
1/2 c dry milk
1 c shredded zucchini

Fill greased muffin pans two-thirds full. Bake at 400 degrees for 20-25 minutes. Take out of pans immediately.

They were pretty good, especially considering I used whole wheat flour and, substituted the oil with applesauce. They were plenty sweet, even with only 1/4 c sugar.

For lunch Camille and I had Vegetable Quesadillas:

1 c salsa
1 c drained canned black beans, rinsed
1 zucchini, shredded
eight 6 inch fat free flour tortillas
3/4 c shredded Monterey Jack cheese

In medium bowl, combine salsa, beans, and zucchini. spread 1/4 mixture over each of 4 tortillas. Top each portion with 3 tbsp cheese. Cover over with another tortilla.
Heat an 8in nonstick skillet over med. heat. One at a time, cook each quesadilla, turning once until cheese is melted, about 1 min per side. Cut each into quarters.
Makes 4 servings - 5 pts per serving.

I really liked these. C told me she didn't like the red in it or the zucchini in it, but I managed to get her to eat a few bites.

Dinner was this Zucchini Beef Bake:

2 zucchini (sliced in 1/4 inch slices)
1 lb ground beef
1 T chopped onion
1/2 c diced celery
8 oz can tomato sauce
1/2 t salt
1/2 t basil or oregano
1/4 t pepper
1/2 lb mozzarella cheese

Layer a 9x13 pan (greased) with 1/4 inch slices of zucchini. Brown ground beef with onion and celery. Pour off grease. Stir in tomato sauce, salt, pepper, and basil or oregano. Pour over zucchini. Spread grated mozzarella cheese on top. Bake at 350 degrees for 40 minutes.

This was especially good. Brian said it tasted kind of like lasagna. Since it has zucchini instead of noodles, it must be healthier, right? I made it in a smaller pan (8x11 maybe) because I didn't think I could spread the 2/3 lb of meat I had across a 9x13. It has been a long time since I used real ground beef instead of ground turkey. I forgot how fatty it is when you buy the cheapest kind.

Bonus Dessert! Brian actually made these a few days ago. C and O "helped." Brian commented that he didn't understand how I ever managed to cook anything without going nuts when the kids help. The cupcakes were delicious. I remember Mom making them a few times. They are pretty ugly cupcakes, but they are also very yummy.

Zucchini cupcakes

3 eggs
1 1/3 c sugar
1/2 c vegetable oil
1/2 c orange juice
1 t almond extract
1 1/2 c all-purpose flour
2 t ground cinnamon
2 t baking powder
1 t salt
1/2 t ground cloves
1 1/2 c shredded zucchini

Caramel Frosting
1 c packed brown sugar
1/2 c butter or margarine
1/4 c milk
1 t vanilla extract
1 1/2 to 2 c confectioners sugar

In a mixing bowl, beat eggs, sugar, oil, orange juice, and extract. Combine dry ingredients; add to the egg mixture and mix well. Add zucchini and mix well. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees for 20-25 minutes or until cupcakes test done. Cool for 10 minutes before removing to a wire rack.
For frosting, combine brown sugar, butter, and milk in a saucepan; bring to a boil over medium heat. Cook and stir for 2 minutes. Remove from the heat; stir in vanilla. Cool to a lukewarm consistency. Stir in confectioners sugar until desired consistency is reached. Frost cupcakes. Yield: 1 1/2-2 dozen

Oh, I forgot to mention that the cupcakes really didn't rise much at all. Brian was a little disappointed, but again, they were delicious, so appearance doesn't matter.

Snickerdoodles

I've been in a cookie making mood lately, so I decided to make these for our Sunday evening treat. It's a page ripped out of a cookbook so I figured it would be pretty good.

1 c. soft shortening
1 1/2 c. sugar
2 eggs
2 1/4 c. all purpose flour, stirred and measured
2 tsp. cream of tartar
1 tsp. soda
1/2 tsp. salt
2 tbsp. sugar
2 tsp. cinnamon

In large mixing bowl, cream shortening and 1 1/2 c. sugar; add eggs; beat until light and fluffy. Stir together flour, cream of tartar, soda, and salt; stir into shortening mixture until well blended. Roll dough into balls the size of small walnuts, then roll in mixture of 2 tbsp. sugar and 2 tsp. cinnamon. Place 2 inches apart on ungreased baking sheet. Bake at 400 degrees F. for 8 to 10 minutes or until cookies have barely flattened out and are slightly browned. (Cookies puff up at first, then flatten out with crinkled tops.) Makes 5 dozen 2-inch cookies.

These were yummy snickerdoodles. I do already have a recipe I like to use for snickerdoodles that is in a Gooseberry Patch cookbook, but this one was good, too.

I purposely halved the recipe so there would not not be 5 dozen (though I only got about 18 2 inch cookies) tempting me to eat them. Good thing, too, becau
se there were not very many left when we went to bed that night.
