This is the classic recipe that Mom made, though I don't really remember eating them much when we were younger.
3 lbs. chicken breasts
2 cans cream of chicken soup
1 c. sour cream
1 1/2 c. chopped onions
1 can (4 oz) green chilis
grated cheese
flour tortillas
Boil chicken till tender and done. Bone the chicken and shred it into pieces. heat soup, sour cream, onions and chilis together for 5 minutes. Put some chicken, cheese and a couple of tablespoons of soup mixture into each tortilla and roll each one separately. Put in a lightly greased baking pan. Pour remaining sauce over top and sprinkle with cheese. Bake for 30 minutes at 350 degrees.
These are awesome! Grandma made them for us while we were in Aberdeen. And I made them last Sunday. I had the one leftover one Monday for lunch.
The best thing about trying this recipe was that I tried out our time cook feature on the oven. These were perfect when we got home!
I mostly remember having these with leftover turkey.
ReplyDeleteI like those too, but we rarely have them anymore because they have basically been replaced by vegetable (bean and peppers) enchiladas in our house.
