This was another recipe I made to fulfill my cookie cravings and I only picked it because we had the ingredients and they are mostly healthy.
3/4 c. margarine
1 c. packed brown sugar
1/2 c. sugar
1 egg
1 c. cottage cheese
1 1/2 tsp. vanilla
1 c. flour
1/3 c. wheat germ
1 tsp. salt
1/2 teaspoon soda
3 cups quick-cooking oatmeal
Beat first 6 ingredients until creamy. Add combined dry ingredients. Stir in oats. Drop onto ungreased cookie sheet and bake at 350 degrees for 12 to 15 minutes. Makes 4 dozen.
Well, they were interesting. I can definitely think of better uses of cottage cheese than these cookies ie. lasagna and just eating plain. But, they all got eaten. Little Chubb would probably have eaten them all if we would have let him. I unfortunately didn't halve this recipe so we had a whole bunch that we had to eat.
At least they have a little extra protein...
