Next Best Thing to Robert Redford

A delicious family recipe.  I was happy to find the original hand-written recipe in my pile of recipes.  I needed a picture to blog, so naturally I had a piece for lunch, but totally ruined my nice piece getting it onto the plate, so didn't get a picture.  But I still ate it for lunch.  You will have to imagine the layers of light and dark.

Next Best Thing to Robert Redford

1/2 c butter
1 c flour
1 c ground walnuts (I never use the nuts)
8 oz cream cheese
1 c powdered sugar
1 c cool whip
1 pkg instant chocolate pudding
1 pkg instant vanilla pudding
3 c milk
1 t vanilla
1 c cool whip

Combine flour, butter, and nuts.  Pat firmly into 9"x13" pan and bake at 350 degrees for 15 minutes. Cool.  With electric mixer, beat together cream cheese, powdered sugar, and one cup cool whip.  Spread over the cooled crust.  Whip together the chocolate and vanilla pudding, milk, and vanilla.  Spread over the cream cheese layer.  Top with cool whip and sprinkle with nuts.  Refrigerate.

I really like this dessert I like the perfect combination of flavors and the fact that it is a nice, cool dessert.  Definitely worth making.

  1. I like this dessert, but I always had a problem with the crust. Just flour and butter is pretty tasteless. I think it needs a crust makeover.

  2. Use brownies for the crust. Maybe half or a third of a full recipe.

  3. I was also thinking the crust of lemon bars would be a good replacement.

  4. We had this tonight with the missionaries. I used the lemon bar crust like Janet suggested and both Ben and I would have liked the regular crust better. The lemon bar crust was too hard. I think if you used some powder sugar with the flour it would add a little something to the crust.

    I'll try and get a good picture to put up here.

  5. I made this with the brownie crust, about half the batch. I liked it much better this way, although it was more difficult to get nice slices out of the pan.
